Need an appetizer that you can whip up easily this holiday season? Try marinated olives!

Marinated olives are a quick and easy appetizer that are perfect for a holiday party. You can even make them a few days in advance!

Citrus and Herb Marinated Olives

(V/GF)

Makes 2 cups

 

2 C Olives, assorted with pits
2 T Orange zest
2 T Orange juice
1 t Thyme, minced
1 t Rosemary, minced
1 T Ginger root, freshly grated

Preparation:
Place assorted olives in a bowl. Add orange zest and juice, thyme, rosemary and ginger root. Toss to coat. Let the olives marinate in the refrigerator for a few hours or overnight. When ready to serve, spread them on a baking sheet and bake at 250° for 15 minutes to really POP the flavors. They can be served warmed or at room temperature.
