GRAND RAPIDS, Mich. (WOTV) - Looking for ways to go red this month?  Chef Amy Sherman shares a heart healthy recipe that is perfect for those moments when you want some delicious to munch on.  This Edamame Hummus Recipe with Seeded Crisps are also a great healthy passing dish to bring to any party.

Amy Sherman's Edamame Hummus
1 package (10 to 12 ounces) frozen shelled edamame (green soybeans)
1 can (15 ounces) chickpeas (garbanzo beans), rinsed and drained

1/4 cup extra virgin olive oil

1/4 cup fresh lemon juice

2 cloves fresh garlic, finely chopped
1 teaspoon coarse salt

fresh ground pepper
1 teaspoon  paprika
1 teaspoon oregano
2 teaspoon ground cumin
Dash cayenne pepper

2 to 4 tablespoons water
1/4 cup chopped fresh parsley

Bring a saucepan full of water to a boil.  Add the edamame and cook for about 3 minutes. Drain, rinse with cold water; drain.
In a food processor, place edamame, chickpeas, olive oil, lemon juice, garlic, and all the spices. Cover and process until smooth, scraping sides as needed. With food processor running, slowly add enough water to reach desired consistency.  Stir in fresh parsley. Serve immediately or cover and refrigerate up to 3 days. Serve with fresh veggies or whole grain crackers. If desired, garnish with a drizzle of olive oil.

Makes 3 cups


Amy Sherman's Seeded Crisps

1/4 cup flax seeds
1/4 cup sesame seeds
1/4 cup poppy seeds
4 (10- to 12-inch) flour tortillas
1 large egg beaten with 2 tablespoons cold water and 1 teaspoon salt

Preheat oven to 350°F.
Stir together flax, sesame, and poppy seeds.
Put 1 tortilla on each of 2 baking sheets and brush with some egg mixture. Sprinkle with seeds to coat, then cut each tortilla into long thin triangles with a sharp knife.
Bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until crisp and lightly golden, 15 to 20 minutes total. Transfer triangles to racks to cool. Repeat with remaining 2 tortillas.
