Peanut butter protein bars

DIY protein bars, a quick on-the-go snack

GRAND RAPIDS, Mich (WOTV) - These protein bars are a healthy snack option for you and your family as you travel or simply live life on-the-go. Use them to refuel after a workout, pack a few in your carry-on bag as a mid-flight saving grace from airplane food, or as a speedy breakfast when mornings just don't quite work out as planned (do they ever?). They freeze nicely too!

Peanut Butter Protein Bars
(v/gf)
Makes 9 2 1/2" X 2 1/2" bars

Ingredients:
1 t Coconut oil
3/4 C Honey or agave
1/2 C Peanut butter
1 C Quick oats
1/2 C Each: Raw and chopped almonds, raw sunflower seeds, raw pumpkin seeds
1/2 C Protein powder, plant-based
1/4 C Coconut, unsweetened and flaked
1/2 t Vanilla extract

Preparation:
Grease an 8" X 8" glass baking dish with coconut oil and set aside.
Warm honey/agave and peanut butter in a medium sauce pan.
While that mixture is heating place oats, chopped almonds, sunflower seeds, pumpkin seeds, protein powder and flaked coconut in a bowl.
When the heated mixture becomes smooth and warm, add the vanilla extract and the dry ingredients, then stir.
Press into a prepared glass dish and refrigerate.
When firm, cut into 9 bars.

mTip: You can wrap the bars individually and freeze them for future use, but they never seem to last that long at our house so you may want to double or dare I say triple the recipe! They're really good while still warm too.
