I love to entertain and I really love surprising people with great tasting food that is also healthy and vegan!  I think people tend to assume that because I do not consume animal products that I also have given up on taste and that is simply untrue!

This truffle recipe is so easy it can be made in minutes, and rolling the different toppings on can be a family affair.  You will not be disappointed with these yummy treats.  -Om Shanti ~Michele

 

So Easy Vegan Truffles 

1 Package Silken Tofu (12 oz)
1 Package Ghiradelli (dairy free) Semi Sweet Chips (12 oz)
1-3 TBL Pure Maple Syrup
1 tsp Vanilla - OR Kaluha

TOPPINGS-
Crushed Pecans or Walnuts
Crushed Raw Cacao
Shredded Organic Coconut

Directions:

Puree the Tofu block with a mixer
Meanwhile melt chocolate chips in microwave or a double burner.
Add pureed tofu to melted chocolate
Add the maple syrup and the vanilla...

Roll about a tablespoon size amount into balls.  Rolls the balls into your toppings.  I have listed some here I like to use but you can go wild with ideas.  Then refrigerate them for 1-2 hours to serve.  Now, try not to eat too many.
