GRAND RAPIDS, Mich. (WOTV) - Michigan's Summer harvest is filled with delcious fruits and veggies. Chef Amy Sherman is all about using local flavors and this recipe is a sweet spin on a summer salad.
Amy Sherman's Peachy Salad
about 4 peaches (or nectarines)
about 1 pound tomatoes, any kind
1/4 cup shredded fresh basil
about 6 ounces crumbled fresh goat cheese
For the dressing:
1/4 cup extra virgin olive oil
3 tablespoons white balsamic vinegar
1 tablespoon finely minced fresh ginger
2 jalapenos, seeds removed, sliced
1 teaspoon Ras al Hanout (Moroccan spice blend) salt and pepper
Cut the peaches and tomatoes into a large dice. Mix all of the dressing ingredients together, check the seasoning. Toss the fruit and veggies with the dressing then layout out on a platter. Sprinkle with the basil and the crumbled goat cheese and serve.
