GRAND RAPIDS, Mich. (WOTV) - Watermelon is one of summer's sweetest fruits. Looking for ways to mix it up? Try Chef Amy Sherman's tasty twist on this classic fruit. It's a sweet and savory mix that is a delicious side dish this summer.
Amy Sherman's Watermelon and Tomato Salad
1 large cucumber, seeded and cut into a large dice about 5 cups cubed watermelon about 1 pound tomatoes, cut into a big dice
3 avocados, diced
1 tablespoon lemon juice
chopped mixed resh herbs, like tarragon (my favorite), basil, mint, cilantro and chives
extra virgin olive oil
salt and pepper
Toss all the veggies and fruit together. If you are cutting the avocado ahead of time, toss it with the lemon juice so it doesn't turn brown. Drizzle with olive oil, vinegar, salt and pepper. Sprinkle with lots and lots of fresh herbs, then platter the salad up and serve right away.
