GRAND RAPIDS, Mich. (WOTV) - There is nothing like the taste of local produce that is in season, but spring is such a busy time of year with extra gardening duties, kids sports and the school year wrapping up sometimes it's hard to make a good home-made meal. That is why this recipe is a go-to for our family this time of the year. It's fresh, seasonal, healthy and maybe most importantly FAST. Check out all the colors of the vegetables, gorgeous.
Michigan asparagus will be in D&W Fresh Market stores this weekend. Hopefully this recipe will be in your family's spring go-to meal file too.
Fast Asparagus Fajitas
Makes 6 Fajitas
1 Bunch of asparagus spears, sliced into 2" pieces
1 Red bell pepper, sliced into 1/4" strips
1 Yellow bell pepper, sliced into 1/4" strips
4 Green onions, sliced into 2" pieces
1/2 Red onion, sliced into 2" pieces
1 Zucchini, small to medium size, cut into matchsticks
3 Garlic cloves, minced
1 T Lime juice
1 Envelope of Spartan brand fajita mix
6 Corn tortillas (can substitute flour tortillas for non gluten-free)
2 T Extra virgin olive oil
In a bowl combine asparagus, red and yellow peppers, green and red onions, zucchini, garlic, lime juice and fajita spice mix. Toss to coat and let marinate for 30-60 minutes.
Preheat oven to 250 degrees. Place tortillas in a glass covered casserole dish and heat them in the oven until warm, about 10 minutes.
While the tortillas are warming, in a sauté pan heat the oil over medium heat. With tongs, remove the vegetable fajita mixture reserving the marinade.
Place the vegetable mixture in the sauté pan and cook the veggies until tender, about 8 minutes, adding some of the marinade back if the vegetable mixture becomes too dry.
Lay the vegetables in the warm tortillas and serve with salsa or my cashew ranch dressing .
