1 cup plain greek yogurt
1/2 cup mayonnaise
1/3 cup honey
1 tablespoon whole grain mustard
zest and juice from one lime
2-3 teaspoons curry paste
salt and pepper
2 tablespoons chopped fresh cilantro
1 tablespoon chopped fresh mint
2 cups leftover cooked chicken, diced
1 celery stick, diced
1/2 cup chopped roasted almonds
1 cup golden raisins, plumped
4 green onions, sliced
Romaine leaves, crackers, or rolls
In a large bowl, combine the yogurt, mayo, honey, mustard, lime juice, curry, salt, pepper, cilantro, mint and zest. Whisk well. Add the rest of the ingredients. Mix well. Serve either as a salad, on crackers, or on rolls.
