GRAND RAPIDS, Mich (WOTV) - Eggs are a super food. They are packed with protein, cook quickly, and are inexpensive. This recipe is a healthy blend of eggs, tomatoes, and peppers that will give you steady energy, that will help you feel full longer. This egg scramble will quickly become one of your favorite breakfast dishes for more than just race day.
1 can fire roasted tomatoes, diced
1 cup roasted red peppers, diced
1 clove garlic, minced
1/2 tsp smoked paprika
squeeze of fresh lemon
salt and pepper
1/4 cup chopped fresh cilantro
6 farm fresh eggs
2 oz sharp cheddar cheese, grated
Mix together all of the first ingredients in a skillet and heat to a simmer. Cook for a few minutes. Make 6 wells in the tomatoes and crack an egg in each one. Cover with a lid. Cook until the eggs are just set. Sprinkle with the cheese and serve with whole grain bread.
