GRAND RAPIDS, Mich. (WOTV) - Michigan peaches are flowing into D&W Fresh Market by the crateful, so grab any tall narrow glass like a champagne flute, a beer pilsner or heck even a jar will do and let's make parfaits!
Don't be intimidated by the French name or the fancy looks of these little layered beauties. In my kitchen parfaits are simply layered loveliness in a glass. I like to use something creamy (plant-based ice cream, whip cream or yogurt), something bready or crunchy (like plant-based not-so-perfect homemade cookies, crumbles of defunct muffins or granola) and something fruity (seasonal fresh fruit is best), then layer at will.
If you get all of the ingredients prepared, kids will love to fill the glasses!
Michigan Peach Parfaits
Makes one parfait
1 Michigan Peach
1 6oz So Delicious Dairy Free Cultured Coconut Milk- Plain Greek Style
1 T Agave Nectar
1 t Ginger, freshly grated
1/8 C Granola
3 Basil leaves, small
Wash the peach thoroughly using my produce wash then dice it and set aside. Open the container of Greek style "yogurt" and mix in the agave nectar and ginger right in the container. Layer starting with the "yogurt" in the bottom of the glass, then add the peaches and sprinkle with granola. Repeat the layering until the glass is full. Garnish with a sprig of small basil leaves. Chill until ready to serve.
