Chef Amy Sherman's Soy Glazed Almonds
2 cups almonds
1/4 cup soy sauce
1 TBLS brown sugar
1/4 tsp ground ginger
1/4 tsp garlic powdered
1/4 tsp cayenne pepper
2 tsp sesame oil
Preheat oven to 250 degrees. In a saucepan mix together everything but the sesame oil. Bring to a boil and reduce down until the almonds are coated with the sauce about 5 minutes. Stir in the oil. Spread the almonds out on a sheet pan and bake in the oven for 8 to 10 minutes, or until dry to the touch. Store the almonds in an airtight container.
